
The structure of the cold room is made of modular panels with insulation by 70 mm thick expanded polyurethane, covered in white plasticised galvanised steel (AISI 304 stainless steel covering by request). The floor is made of panels with insulation by 3 cm thick polyurethane with a further reinforcement by 10 mm thick antislip phenolic material. The false ceiling and the wall channel for air recirculation are made of AISI 304 stainless steel.
The air distribution system consists of channels located on the whole length of the cold room so as to guarantee a uniform and indirect air flow on the product, ensuring a homogeneous fermentation and avoiding any defect on the bread surface.
The refrigerating machines have been calculated to ensure a high humidity level and a huge refrigerating power even in case of a slow ventilation speed.
Evaporators are painted to avoid unpleasant corrosions even after years of usage.
Humidity is generated by special boilers provided with resistors, which can distribute steam quickly and precisely. This simple, economical but effective system does not require any maintenance nor periodical replacements of dipped electrode generators.
All the functions of the cold room are programmed, managed and controlled by an up-to-date software developed by Everlasting. The program is highly intuitive and user-friendly, thanks to the simple control panel showing all settings on a backlit alphanumeric LCD display. Moreover, the big synoptical board placed above the door allows sight control of cycle progress even in the distance.
